01 - Preheat oven to 350°F. Line a 9x9 inch baking pan with parchment paper.
02 - In a large bowl, mash the bananas. Whisk in honey, egg, melted coconut oil, and vanilla extract until smooth.
03 - Stir in oats, flour, baking powder, cinnamon, and salt. Fold in nuts and chocolate chips if using.
04 - Spread the mixture evenly into the prepared pan. Bake for 22-25 minutes, or until edges are golden and a toothpick comes out clean.
05 - Let cool completely before slicing into bars.
