01 - Dissolve strawberry gelatin in 1 cup boiling water, stir in 1 cup cold water. Pour into shallow dish and refrigerate 1 hour until set. Repeat process with lemon gelatin in separate dish.
02 - Beat heavy whipping cream in mixing bowl until soft peaks form. Set aside for later use.
03 - Beat cream cheese, sugar, and vanilla extract until smooth. Gently fold whipped cream into cream cheese mixture until fully incorporated.
04 - Remove both strawberry and lemon gelatin from refrigerator. Cut both flavors into 1/2-inch cubes.
05 - Layer ingredients in each jar: spoon cream cheese mixture on bottom, add strawberry gelatin cubes with diced strawberries and mini marshmallows. Add more cream mixture, then lemon gelatin cubes with pineapple and marshmallows. Finish with remaining cream mixture on top.
06 - Refrigerate assembled jars for at least 1 hour to set before serving.
07 - Top each chilled parfait with whipped cream, marshmallow bunny candy, and pastel sprinkles just before serving.
