01 - In a large mixing bowl, combine peanut butter, honey or maple syrup, and vanilla extract. Stir together until the mixture is smooth and homogenous.
02 - Add rolled oats, protein powder, chia seeds if desired, mini chocolate chips or cacao nibs if desired, and salt. Mix thoroughly to form a sticky dough.
03 - Using a tablespoon or small cookie scoop, portion the dough and roll between your palms to create 1-inch diameter balls.
04 - Place the formed balls on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to allow the balls to set.
05 - Transfer the protein balls to an airtight container and store in the refrigerator for up to one week.
