03 - Stir in minced garlic and cook for 1 minute until fragrant.
04 - Add cumin, smoked paprika, cayenne pepper, coriander, chili flakes, salt, and black pepper. Stir well and let the spices cook for 1 minute to enhance their flavors.
05 - Pour in crushed tomatoes and diced fresh tomatoes. Simmer uncovered for 10 to 12 minutes, stirring occasionally, until the sauce thickens.
06 - Taste and adjust salt, pepper, or heat to preference.
07 - With a spoon, make small wells in the sauce. Gently crack one egg into each well.
08 - Cover the pan and cook for 6 to 8 minutes, or until egg whites are set and yolks remain soft.
09 - Remove from heat. Sprinkle with additional parsley, cilantro, and crumbled feta cheese if using.
