# Directions:

01 - Carefully remove 8 large outer leaves from cabbage head, trimming thick center stem for easier rolling. Rinse thoroughly and pat completely dry with paper towels.
02 - Peel mango and slice into thin strips. Julienne carrot and cucumber. Thinly slice red bell pepper. Combine all prepared vegetables, mango, cilantro, and mint in large mixing bowl.
03 - Whisk together peanut butter, lime juice, soy sauce, maple syrup, grated ginger, and minced garlic in separate bowl. Gradually add 2 tablespoons warm water, whisking until smooth and pourable. Add additional water if needed.
04 - Arrange cabbage leaves on flat surface. Place generous portion of vegetable-mango mixture in center of each leaf. Drizzle with peanut sauce and sprinkle with chopped peanuts.
05 - Fold sides of each cabbage leaf inward over filling, then roll tightly from bottom to top to form secure wrap. Serve immediately while vegetables remain crisp.
