14 - 4 brioche burger buns
15 - 1 tomato, sliced
16 - 4 lettuce leaves
17 - 2 tbsp mayonnaise
18 - 1 tsp hot sauce (optional)

→ Cooking

19 - 2 tbsp olive oil or butter, for frying

# Directions:

01 - In a large bowl, combine ground turkey, finely chopped onion, minced garlic, Dijon mustard, Worcestershire sauce, salt, black pepper, breadcrumbs, and egg. Mix gently until just combined.
02 - Shape the mixture into 4 equal-sized patties for uniform cooking.
03 - Heat 1 tablespoon olive oil in a skillet over medium heat. Cook the patties 5 to 6 minutes per side until golden brown and fully cooked. In the last minute, place a slice of cheddar cheese on each patty and cover to melt.
04 - In a separate pan, cook bacon slices until crisp. Drain excess fat on paper towels.
05 - Wipe out bacon pan, add a bit of oil or butter, and fry eggs sunny-side up or to preferred doneness. Season with salt and pepper.
06 - Lightly toast brioche burger buns until golden.
07 - Mix mayonnaise with hot sauce if using, then spread evenly on the cut sides of each bun.
08 - On the bottom bun, layer lettuce and tomato, top with the turkey patty with melted cheese, avocado slices, two bacon strips, and a fried egg. Cover with the top bun.
09 - Serve the burgers immediately while warm.

# Expert Advice:

01 -
  • The fried egg yolk breaks into the turkey patty and acts like its own sauce, something I discovered by accident and can't live without now.
  • You feel like you're eating something indulgent for brunch when really you're getting serious protein and actual vegetables.
  • The whole thing comes together in about 40 minutes, which makes it perfect for a weekend when you want to impress people without spending all morning cooking.
02 -
  • Don't mix the turkey patties more than necessary, overmixing makes them compact and rubbery instead of tender and juicy.
  • The fried egg is not optional, it's the whole reason this works, the runny yolk is your sauce and moisture all in one.
03 -
  • Chill your turkey mixture in the fridge for 15 minutes before forming patties, it's way easier to handle and they cook more evenly.
  • If your avocado is hard when you're ready to cook, slice it anyway, the warmth of the burger will soften it just enough to create that creamy texture.
